Baked Chicken Breasts

A concoction I came up with that yields moist, scrumptious skinless chicken breasts ... a favorite here at home 2 Large boneless, skinless Chicken Breasts 3 Tablespoons Olive or Safflower Oil 2 Tablespoons Butter 1 Tablespoon Lemon Juice 1 Tablespoon Balsamic Vinegar 1/2 teaspoon Chicken Seasoning 1/2 teaspoon Marjoram or Tarragon 1/4 teaspoon White Pepper Dash of Smoked Sea Salt Grated Parmesan Cheese (optional) Pre-heat oven to 350° F. In a small bowl blend the Oil, Butter, Vinegar, Lemon Juice, Seasoning, Pepper, and herb. In a glass baking dish place about 1 Tablespoon of mixture for each chicken breast. Lay the chicken breasts on top of the mixture. Spoon the rest of the mixture over the chicken breasts as evenly as possible. Lightly sprinkle with Smoked Sea Salt. Place a foil tent over the baking dish. Bake for 25 minutes at 350° F. Remove foil and sprinkle with grated Parmesan Cheese if desired. Bake for 10 more minutes.
