We had some left over chicken strips one weekend and decided to chop some of them up and add them to a salad. I think this is now one of my new favorites!SaladMixed greens (I’m currently using Romaine, Green Leaf, and Little Gems, but sometimes use Baby Kale, Chard, Spring Mix, and Baby Spinach)Shredded CarrotsBlack Olives, slicedGrape Tomatoes, halvedAvocado, dicedSweet White CornExtra Sharp Cheddar, coarsely shredded (I love the KerryGold Dubliner cheese)Fried Chicken Strips, Sliced or DicedPrepare mixed greens and toss with carrots. Add all the other ingredients to salad. Drizzle with Ranch Dressing and toss again.
